New Restaurants Open in McKinney and Prosper

Two new dining establishments are preparing to open their doors in North Texas, bringing fresh options to McKinney and Prosper.

Shorty’s Coney’s & Cocktails is scheduled to open in McKinney on March 16. The restaurant will occupy a historic building on the McKinney square that has stood since 1875, noted as the first non-wood structure in the district. The venue previously housed Snug On The Square.

Owner Bryan McVay describes the project as a long-term goal. His career in the food industry began at age 15 working in a hot dog shop near Pittsburgh, Pennsylvania. He later held executive roles in restaurant accounting and management for companies including Hard Rock Cafe and House of Blues. Fifteen years ago, a position with Front Burner Restaurants brought him to Texas. The concept for Shorty’s developed during a walk through downtown McKinney with his wife during the pandemic, when they observed the vacant building.

McVay intends for the new location to serve as both a family-friendly lunch spot and a late-night venue. He stated that if he could become a restaurant, it would be Shorty’s.

In neighboring Prosper, a second Jimmy John’s location is set to open. The sandwich chain, owned by Inspire Brands, offers made-to-order subs, wraps, and side dishes such as pasta salad and potato salad. The new site will provide additional catering and combo meal options for residents.

Whitewright is about 15 miles southeast of Sherman.
